Hearts of Romaine Salad
and Stilton Cheese
drizzled with balsamic
vinegar, served with Italian Bread and spiced pecans
I saw this unique salad on the menu of a fine dining restaurant in Oro Valley,
Arizona that intrigued me, I was so impressed with the presentation and the combination of flavors, I had to make it in my

Serves 2
Ingredients:
One Romaine lettuce heart
small amount of salt to taste
2 teaspoons Balsamic Glaze (available at Trader Joe's)
2 small 1-inch wedges aged Stilton cheese
2 tablespoons Spiced Pecans
2 thinly sliced Italian Bread slices
Instruction:
Preheat oven to 300 degrees F.
Put bread slices on a sheet pan with a heavy pan on top to keep the slices flat as
they bake for 30 to 35 minutes or until lightly toasted. This can be done ahead of time.
Carefully remove bread slices from oven (they are fragile and can break easily).
Cut lettuce in half lengthwise, sprinkle with salt, drizzle with balsamic glaze.
Place on individual serving plates with the bread slice, a small wedge of cheese and spiced pecans.
Spiced Pecans:
1/4 cup pecan pieces
1/4 teaspoon butter, melted
pinch garlic salt
1 - 2 drops Tabasco Sauce
Instruction:
Mix ingredients together; spread in a single layer on baking
sheet. Broil for 1 - 3 minutes, do not burn.
