Fresh Green Pea Salad with Shrimp
toasted almonds, crisp celery and
sliced black olives with a unique curry dressing
This fresh petite green pea and shrimp salad recipe was shared with me by my Aunt Muriel.
I tried it and received rave reviews. Every ingredient compliments
the unique taste making this a "keeper" salad recipe, especially the mild curry dressing that pairs so well
to bring all the ingredients into harmony.

Yield: 4 cups
Ingredients:
10 ounce package frozen petite peas, thawed, drained
1 cup celery, thinly sliced
1/2 cup sliced almonds, toasted
1/2 cup black medium sized olives, sliced
5 oz. can small shrimp
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
1/2 teaspoon garlic salt
1 teaspoon soy sauce
1/4 teaspoon curry powder
Kosher Salt, to taste
freshly cracked black peppercorns, to taste
Instruction:
Combine in a bowl the petite green peas, celery, almonds, olives
and shrimp; cover and refrigerate for at least 1 hour to develop the flavors.
In another small bowl mix together the mayonnaise, lemon juice, garlic salt, soy sauce and curry
powder. Taste for seasoning, add salt and pepper if needed. Pour the
dressing over the salad, toss lightly, cover and chill until ready to serve.
