Tomato Cup Filled With Broccoli
and broccoli florets

I created this simple and different way to serve broccoli as a garnish or as a vegetable alongside a meat entree for lunch or any time. See more of my Garnish Ideas with photographs.

Yield: 1 tomato cup

Ingredients:

1 Roma tomato, small to medium size
4 to 6 broccoli flowerets
Salt and pepper, to taste

Instruction:

Steam broccoli flowerets until tender crisp; remove to an ice water bath to stop the cooking; drain. Season with salt and pepper.

With the tomato resting on its side, use a utility knife to make zigzag cuts around middle of the tomato, gently twist the halves to separate. Remove pulp from center of tomato halves leaving a 1/4-inch wall making a cup. Sprinkle cavities with salt, fill tomato cup with broccoli flowerets and serve as a garnish at your next dinner party or serve as appetizers.
