Recipe Type: garnish,
vegetable, tomato, broccoli,
dinner party, appetizer
Prep Time:10 min
Total Time: 10 min
Yield: 1 tomato cup
Ingredients:
1 Roma tomato, small to medium size
4 to 6 broccoli flowerets
Salt and pepper, to taste
Instruction:
Steam broccoli flowerets until tender crisp; remove to an ice
water bath to stop the cooking; drain. Season with salt and pepper.
With the tomato resting on its side, use a utility knife to make zigzag cuts around middle of the tomato, gently
twist the halves to separate. Remove pulp from center of tomato halves leaving a 1/4-inch wall making a cup.
Sprinkle cavities with salt, fill tomato cup with broccoli flowerets and serve as a garnish at your next dinner party or
serve as appetizers.
