Total Time: 25 min   Prep Time: 25 min Servings: 8

Ingredients

4 cups potatoes, peeled, thinly sliced
1 cup sharp cheddar cheese, grated
Salt and pepper, to taste
1/2 cup heavy cream
4 teaspoons butter
8 lengthwise unpeeled 1/4-inch slices English cucumber
Sweet Potato Shoestring - optional


Directions:

Preheat oven to 350 degrees F.

Butter eight, 1/2 cup ramekins. Layer potato slices in each, sprinkle with salt and pepper, finishing with a layer of cheese on top. Add 1 tablespoon cream to each ramekin, dot tops with butter and bake for 35 to 40 minutes or until fork tender. Remove from oven and invert onto individual plates.

To Make Cucumber Garnish:
Cut a small crosswise slit in each cucumber slice close to one end large enough to thread the other end through (see my photo).
This can be done ahead of time. Wrap one around each threading through the cut slit.

Top with a shoestring potato garnish that can be made in advance.

Wine recommendation: Pinot Gris; Chardonnay
