To Make Cucumber Garnish:

Ingredients
4 cups potatoes, peeled, thinly sliced
1 cup sharp cheddar cheese, grated
Salt and pepper, to taste
1/2 cup heavy cream
4 teaspoons butter
8 lengthwise unpeeled 1/4-inch slices English cucumber
Sweet Potato Shoestring

Directions:
Preheat oven to 350 degrees F.
Butter eight, 1/2 cup ramekins. Layer potato slices in each,
sprinkle with salt and pepper, finishing with a layer of cheese on
top. Add 1 tablespoon cream to each ramekin,
dot tops with butter and bake for 35 to 40 minutes or until fork
tender. Remove from oven and invert onto individual
plates.
Cut a small crosswise slit in each cucumber slice close to one end large enough to
thread the other end through (see my photo).
Top with a
shoestring potato garnish
that can be made in advance.
