Salad Greens with Radish Zucchini Garnish
uniquely wrapped in a circle of radish slices with a rolled up
garnish for a different presentation. Just another gourmet way to serve this entree.

Ingredients:
1 cup salad greens, bite size (Romaine or Butter Lettuce or mixed greens)
1 green zucchini squash, stem end trimmed, sliced very thin lengthwise
Extra-virgin olive oil
Salt, to taste
Cracked black pepper
2-1/2-inch ring moulds (I use clean 8 ounce tomato sauce cans, both ends removed)
Instruction:
Apply a small amount of oil to the inside of a ring; place on
an individual plate. Trim root end of radish so that it will
stand upright. Cutting down vertically, make very thin slices, put
in a small bowl,toss with olive oil, salt and pepper. Arrange them inside
ring mould wall, cut side down, against the oil (this helps slices to stay in place); overlap
them slightly (see my picture).
In a small bowl drizzle greens with oil, salt and
pepper, carefully place them inside the mould without
disturbing radishes.
Season zucchini slices with salt and pepper, roll them up, pull the center portion
of them up slightly to make a tower
(see my photo); fasten with a toothpick. This
can be done ahead.
To serve, slowly lift and remove the ring, and toothpick from the
squash roll and place in the center. Garnish plate with drizzles of olive oil and balsamic vinegar if
desired and serve.
