Peach caprese salad tower is a variation on the classic tomato, mozzarella cheese and fresh basil leaves substituting freshly sliced peaches for juicy tomatoes but still stacking it high and adding balsamic vinegar with extra virgin olive oil.

Ingredients:

1 peach
1 ounce Mozzarella cheese
4 fresh basil leaves
1-1/2 teaspoons extra-virgin olive oil
1 teaspoon balsamic vinegar
Salt
Pepper


Preparation:

Halve the peach, remove pit and slice 1/4-inch thick. Slice mozzarella cheese 1/4-inch thick also. If necessary, trim cheese to same shape as peach slices, they will look better this way. Combine olive oil and balsamic vinegar in a small bowl.

To make a tower arrange peach slice on plate, drizzle with small amount of olive oil-vinegar, salt and pepper; top with a cheese slice, more oil and seasoning, then basil leaves with drizzle of oil, salt and pepper. Continue layering ending with a peach slice and serve.

Wine recommendation: Champagne; Pinot Noir
