You will need:
2 (12 x 12-inch) plastic wraps
2 martini glasses
2 Mangoes, peeled, thinly sliced
1 pint vanilla ice cream
Mint sprigs for garnish
Fit plastic wrap inside martini glasses draping excess over the side, fill with
ice cream, packing it down with the back of a spoon making a cone shape, pressing in firmly, smooth the tops, fold plastic
wrap over, cover and freeze.
Place serving plates in freezer to chill.
When ready to serve, square off a small slice at one end of each mango slice so that they fit squarely on the
plate. Invert the cone shaped ice cream onto the chilled serving plates, remove
plastic wrap, arrange mango slices around the cone shapes overlapping them
slightly resembling a rose (see my photograph); garnish with mint and serve.
