Yield: 1 cup
2 tablespoons butter
1 scallion, chopped
2 tablespoons celery, chopped
1/2 small garlic clove, minced
1/3 cup petite green peas
1/2 cups chicken stock or broth
6 tablespoons fresh mint leaves chopped plus 2 sprigs for garnish
1/4 cup heavy cream
salt to taste
Melt butter in saucepan over medium heat, add scallion, celery and garlic; saute for 2
minutes; add peas, chicken stock and mint leaves. Bring to a boil then turn
heat down to a simmer for 4 to 6 minutes.
Transfer the mixture to a food processor; puree then strain. Transfer to a container with a pouring
spout, add the cream and salt to taste, cover and chill in refrigerator.
When ready to serve pour into glasses and garnish.
