Carrot Garnish
Easy Colorful Vegetable Garnish Anyone Can Make
Fresh pea pods and carrots make a very easy and flavorful crunchy vegetable garnish to arrange on
individual plates for a dinner party, luncheon or family
gatherings, so easy to do and they are an attractive
garnish

Ingredients:
Pea pods, 5 per person, strings removed, stem ends trimmed
Carrot, peeled, sliced 1/4-inch, 3 per person
Vegetable oil
Kosher salt
Freshly cracked black peppercorns
Instruction:
Prepare an ice bath by filling a large bowl with ice cubes and cold water; set aside.
Cook vegetables in separate saucepans in boiling salted water until al dente (tender crisp).
Drain, plunge immediately into ice bath to stop the cooking; drain again.
Drizzle pea pods and carrot slices with a small amount of vegetable oil to make
them shiny and attractive. Toss lightly with salt and
pepper. Arrange 5 pea pods and 3 carrot slices on each plate (see my
photograph) alongside the main entree and serve. So simple and attractive!
