French Toast 'Stars' filled with Sliced Bananas

2 (1 inch thick) slices French Bread
2 eggs beaten
1 tablespoon milk
1/8 teaspoon vanilla
1 tablespoon butter
1 banana sliced 1/4-inch thick
1/8 teaspoon Cinnamon
1 tablespoon sliced almonds, toasted
Cut bread into star shapes using a template or cookie cutter.
Whisk together eggs, milk and vanilla; submerge bread slices in the mixture. Heat a skillet with 1 tablespoon butter over medium heat, toast slices until golden brown. Put one slice on a plate, cover completely with freshly sliced bananas. Top with the second star shaped bread slice. Sprinkle with cinnamon, sliced toasted almonds and serve this elegant tasty gourmet breakfast.
