Cucumber Slices made into Cups filled with
Smoked Salmon Mousse, cream cheese, horseradish and lime juice

Thick cucumber slices are hollowed out making cups and cut in a unique and different way then filled with smoked salmon mousse, cream cheese, horseradish and lime juice... a novel and easy idea to serve at dinner parties. See more of my appetizer recipes.

Ingredients

1 English cucumber, unpeeled
2 ounces smoked salmon
4 ounces cream cheese, softened
2 tablespoons heavy cream
1-1/2 teaspoons horseradish
1 teaspoon lime zest minced
1 teaspoon lime Juice
Salt and Pepper to taste
Fresh herbs of your choice for garnish

Instruction:

Cut cucumber crosswise diagonally into 1-1/2-inch slices (see my photograph). Scoop out centers with a melon baller leaving 1/4-inch walls.

In a food processor combine the next 7 ingredients until smooth. Fill cups with this mixture, garnish with herbs and serve this appetizer.
