Small Melonball of Coffee Ice Cream on a Chinese Spoon with Cream Filled Cappuccino Napoleon Cookie

3 thin Cappuccino coffee cookies
1/4 cup heavy cream
Coffee Ice Cream, small scoop
Chinese spoon, chill in the freezer
Carefully square off one side of cookies with a sharp knife allowing them to sit upright on a plate.
Whip the cream to stiff peaks and put 1 tablespoon between two cookies (see my photograph). Gently press together to spread the filling slightly then place upright on a plate, cut side down.
Put ice cream on the chilled Chinese spoon and place on the plate along with the garnishes and serve.
