Chicken Luncheon Salad

Ingredients:
1 Chicken breast, boneless, skinless
1 tablespoon butter
2 tablespoons celery, finely chopped
4 tablespoons green onion, thinly sliced
zest of 1 lemon, divided
2 teaspoons fresh lemon juice
3 tablespoons mayonnaise or enough to moisten
Salt and pepper, to taste
4 Lettuce leaves
2 bananas
2 cantaloupe slices
2 honeydew melon slices
2 pineapple slices
4 strawberries
1/4 cup blackberries
2 tablespoons raspberries
2 banana bread slices
2 tablespoons sliced almonds, toasted
Instruction:
In a skillet over medium heat melt butter; saute chicken breast until juices run clear;
remove from heat and cool. Dice finely and combine in a small bowl with celery, onion,
lemon zest and juice, mayonnaise, salt and pepper.
Serve the salad on lettuce leaves along with cantaloupe, honeydew
melon, pineapple, bananas, strawberries, blackberries, raspberries, sliced banana bread
and toasted sliced almonds, a beautiful gourmet idea for your guests.
