2 Cherry Tomatoes
4 small salad greens (use Arugula, mesclun, spinach or leaf lettuce)
teaspoon Extra-virgin Olive oil
Salt and pepper, to taste
Cut and discard a small slice from the bottom of each
tomato so that they will sit
level. Cut the tops off. Use a melon baller and carefully scoop out the centers making a bowl. Sprinkle insides with salt and pepper,
place upside down on paper towels to drain.
In a small bowl toss salad greens of your choice
lightly with oil, salt and pepper. Stack and roll the
greens with the right side facing out. Place inside the bowl. Put one on each
plate. Simple and elegant!
