Shrimp-Vegetable Cocktail Appetizer

I created this shrimp in a martini glass of freshly chopped tomatoes, bell peppers, cucumber and green onions with cocktail sauce. Rim the glass with chopped parsley for a beautiful presentation. Shrimp Cocktail Vegetable Appetizer

   Total Time: 20 min   Servings: 8

Ingredients:

2 tablespoons fresh lemon juice
2 teaspoons parsley finely minced
8 martini glasses

1/2 cup celery, diced
1/2 cup tomatoes, peeled, seeded, diced
1/2 cup English cucumber, peeled, seeded, diced
1/2 cup red or green bell pepper, diced
2 tablespoons green onion, sliced
Kosher salt and freshly cracked black pepper, to taste
3/4 cup salad shrimp
8 sprigs parsley for garnish 
8 celery sticks,4-inches long, leaves attached

Instruction:

Coat rim of glass:
Put lemon juice in a wide shallow soup bowl. Put minced parsley in another wide shallow soup bowl. Turn martini glass upside down and dip rim in lemon juice then in parsley; set aside, this can be done ahead.

In a large bowl mix celery, tomatoes, cucumber, bell pepper, green onion, salt and pepper together, fold in the shrimp reserving some for the top, spoon into martini glasses being careful to not disturb the parsley. Top each with 1 tablespoon chili sauce, add a celery stalk for a "swizzle stick", garnish with parsley sprigs and serve this unique appetizer. This is so good, easy to make and looks spectacular!
