Mesclun Salad with Sliced Strawberries Add Toasted Pine Nuts and a Raspberry Dressing

Ingredients:
1 tablespoon extra-virgin olive oil
1/2 teaspoon Raspberry wine vinegar
1/2 teaspoon balsamic vinegar
2 cups Mesclun mixed salad green
2 tablespoons chives, sliced 1/2-inch
5 - 6 large strawberries, sliced
2 tablespoons pine nuts, toasted
Instruction:
For the dressing, combine in a small bowl the oil, raspberry and balsamic vinegar, salt and pepper; set aside.
In a medium bowl combine the greens, chives, strawberries and nuts.
Place a ring on each plate (I use a tuna can with both ends removed) and fill with the greens mixture, piling as high as possible for a gourmet
presentation. Drizzle with the dressing, remove the rings and serve this beautiful delicious creation.
