Fresh Zucchini Spaghetti with a refreshing Lemon Dressing

1 medium sized green zucchini squash
1 tablespoon fresh lemon juice
Salt and pepper, to taste
fresh basil or arugula leaves, sliced 1/4-inch
Trim both ends of squash; use a mandoline with a 1/8-inch width tooth blade to make long lengthwise spaghetti-like strands. If you do not have a mandoline use a large knife or vegetable peeler to cut thin slices then cut them into lengthwise julienne strips to resemble pasta.
Put them in a bowl, drizzle with a small amount of lemon juice, mix with salt and pepper. Twirl small amounts of the strands on a long-tined fork, slip them off onto serving plates piling up as high as possible (see my photograph) for a gourmet presentation and serve immediately.
Garnish with sliced basil or arugula and serve with a main entree it is a delicious and easy recipe.
