Twice Baked Sweet Potato Boats

use Sweet Potatoes or Yams





serves 2

1 large sweet potato (or yam)
flour for drenching
2 tablespoons Sour Cream
Salt, to taste
1 tablespoon butter, softened
pinch of cayenne
Fresh Parsley for garnish

Peel the sweet potato or yam, pat dry and roll or drench in flour, brush off excess flour and bake on a sheet pan at 350° for 45 minutes or until tender.

When cool enough to handle, cut baked potato in half lengthwise. Scoop out flesh into a bowl leaving a 1/4-inch shell.  Add sour cream, salt, butter and cayenne to the potato flesh mixing well.

Trim the two sweet potato halves to resemble boats and fill them with the potato mixture.   Return potatoes to the oven and bake twice at 350° for 15 minutes.  Garnish with parsley and serve with a meat course.
