Ripe Watermelon, 3 balls per plate
Using a melon baller make round balls from the red part of a watermelon. Freeze the watermelon balls on a sheet
pan 1-inch apart then transfer the frozen balls to a covered container. Serve three on a plate partially
frozen for a refreshingly simple garnish.
