How to make Spicy Savory Tomato Sorbet

This is my savory tomato sorbet recipe with cayenne pepper to give it a 'kick'. I like to serve it with a Salad or Shrimp.

Savory Tomato Sorbet

Ingredients:

1/2 cup tomatoes, roughly chopped
1/4 cup water
3 tablespoons sugar
2 tablespoons onion, roughly chopped
3 tablespoons red wine vinegar
1/2 teaspoon salt, or to taste
pinch of Cayenne pepper
, add more for spicier
 4 (1/4 cup) ramekins, lined with plastic wrap

Instruction:

In a saucepan bring tomatoes, water, sugar and onion to a boil, lower temperature and simmer 8 to 10 minutes. Transfer mixture to a mini food processor, puree until smooth; strain, discard solids, pour into a small bowl. Add red wine vinegar, salt and cayenne pepper to taste blending well.

Spoon mixture into prepared  plastic lined ramekins (this makes it easy to serve), cover and freeze. When ready to serve invert ramekins onto individual plates, remove plastic wrap and
garnish with balsamic glaze (available at Trader Joe's).

Note:  Another idea for serving savory tomato sorbet: Put into a small bowl; freeze. When ready to serve use a melon baller to make tiny balls.  Serve 1 to 3 balls in stemmed cordial glasses or place 1 to 3 balls sorbet on each plate alongside a salad or seafood dish. This method will serve approximately 8.


Wine recommendation: Pinot Gris; Chardonnay
