Tomato Sorbet

savory delicious tomato flavors with a 'kick'
...different from the usual,
this is a great palate cleanser
.... serve with a
Salad
1/2 cup tomatoes, roughly chopped 1/4 cup water 3 tablespoons sugar
2 tablespoons onion, roughly chopped 3 tablespoons red wine vinegar
1/2 teaspoon salt, or to taste pinch of Cayenne pepper, add
more for spicier
ramekins (1/4 cup), lined with plastic wrap
In a saucepan bring
tomatoes, water, sugar and onion to a
boil, lower the temperature and simmer 8 to 10
minutes. Transfer mixture to a food processor, puree until smooth then
strain, discard the solids and pour into a small bowl. Add red wine vinegar, salt and cayenne
pepper to taste, then spoon into prepared ramekins, cover and freeze. Invert
ramekins onto individual plates, remove plastic wrap and garnish with balsamic glaze (available at Trader
Joe's).
