1/2 cup tomato, peeled, seeded and chopped 1/4 cup water 1/4 cup sugar
2 tablespoons onion, chopped fine 2 tablespoons red wine vinegar
1-1/2 teaspoon salt pinch of Cayenne pepper
In a saucepan bring tomato, water, sugar and onion to a boil; simmer for 8 to 10
minutes. Transfer to a food processor, add vinegar, salt and cayenne
pepper blending well; cover and freeze.
Serve sorbet in small
individual containers or use a melon baller to make small round balls.
Garnish plates with balsamic vinegar glaze (available at Trader
Joe's). Add a cucumber
curl garnish.
