Tomato Sorbet

1/2 cup tomatoes, roughly chopped 1/4 cup water 3 tablespoons sugar
2 tablespoons onion, roughly chopped 3 tablespoons red wine vinegar
1/2 teaspoon salt, or to taste pinch of Cayenne pepper, add
more for spicier
ramekins (1/4 cup), lined with plastic wrap
In a saucepan bring
tomato, water, sugar and onion to a
boil, lower the temperature and simmer 8 to 10
minutes. Transfer mixture to a food processor, puree until smooth then
strain, discard the solids and pour into a small bowl. Add red wine vinegar, salt and cayenne
pepper to taste.
Spoon tomato mixture into prepared ramekins cover and
freeze. When ready to serve the tomato sorbet invert
ramekins onto individual plates, remove plastic wrap and garnish with balsamic glaze (available at Trader
Joe's). Makes approximately 4 servings.
Another idea for serving tomato sorbet: Place the small bowl in the freezer.
When ready to serve use a melon baller to make tiny balls, serve balls in a stemmed cordial
glass or place 1 to 3 balls on each plate alongside a salad or
seafood dish. This method will serve approximately 8.
