Tiramisu can also be made with raspberries, strawberries, blackberries or blueberries in place of chocolate


Tiramisu means "pick me up" in Italian. A rich Italian dessert made with sponge cake (Ladyfingers), infused with coffee-Kahlua liqueur, layered with a cheese filling topped and chocolate in martini glasses.... wow!

Serving a small portion of Tiramisu per person is more than adequate and goes a long way. It should be served when your entire dinner menu is light.... when there are no pasta cream sauces or heavy cream soups served in the same menu

Serves 2

2/3 cup Mascarpone Italian cheese
3 tablespoons powdered sugar
1/2 cup espresso or strong coffee
2 tablespoons Kahlua liqueur
4.75 ounce box Ladyfingers (available at Trader Joe's)
2 teaspoons semi-sweet chocolate, finely chopped for garnish
2 mint sprigs for
garnish

In a mixing bowl blend mascarpone Italian cheese and powdered sugar together until smooth and creamy. In a shallow bowl combine espresso (or strong coffee) and Kahlua liqueur.

Dip Ladyfingers (finger shaped sponge cake) briefly in the espresso-Kahlua mixture, the Ladyfingers are very fragile and fall apart easily if left too long in the liqueur. Line the Ladyfingers vertically around the inside of a martini glass (when they are soft they can be adjusted to fit the narrow base of the glass). Spoon the Mascarpone-sugar mixture into the center of the martini glass, garnish with chopped chocolate, fresh mint sprigs and serve.
