Tiramisu Dessert Cake 








What is Tiramisu?

Tiramisu is an extremely rich Italian dessert cake...   made with small finger shaped sponge cake (Ladyfingers)
infused with coffee-Kahlua liqueur, layered with a cheese filling topped with chocolate in a martini glass....  wow! 
Serving a small portion of Tiramisu cake per person is adequate and goes a long way,
it should be served when your entire menu is light....  that is, no pasta cream sauces or heavy cream soup courses.
Tiramisu cake can also be made with raspberries, strawberries, blackberries or blueberries

serve in martini glasses....     easy to make, spectacular and it is egg free!


Serves 2

2/3 cup Mascarpone Italian cheese
3 tablespoons powdered sugar
1/2 cup espresso or strong coffee
2 tablespoons Kahlua liqueur
4.75 ounce box Ladyfingers (available at Trader Joe's)
2 teaspoons semi-sweet chocolate, finely chopped for garnish 
2 mint sprigs for
garnish

In a mixing bowl blend mascarpone Italian cheese and powdered sugar together until smooth and creamy.  In a shallow bowl combine espresso (or strong coffee) and Kahlua liqueur.

Dip Ladyfingers (finger shaped sponge cake) briefly in the espresso-Kahlua mixture, the Ladyfingers are very fragile and fall apart easily if left too long in the liqueur.  Line the Ladyfingers vertically around the inside of a martini glass (when they are soft they can be adjusted to fit the narrow base of the glass). Spoon the Mascarpone-sugar mixture into the center of the martini glass, garnish with chopped chocolate, fresh mint sprigs and serve.
