Stuffed Tomatoes

I like to serve this tasty flavorful stuffed tomato baked with cheese and breadcrumbs as a side dish along with the main entree.

Serving size: 2 servings


2 medium tomatoes
1/2 celery rib, finely chopped
1 shallot, finely chopped
1 small garlic clove, minced
1/4 teaspoon dried thyme
1/3 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
4 fresh basil leaves
, thinly sliced


Preheat oven to 350 degrees F.

Cut top off tomatoes. Leaving a 1/2-in. shell, scoop out pulp into a small bowl. Lightly salt shells and invert tomatoes onto paper towels to drain.

To the small bowl of tomato pulp, add and mix together celery, shallot, minced garlic and thyme.  Stir in the bread crumbs, Parmesan cheese and basil. Stuff tomatoes, place in a shallow baking dish coated with cooking spray. Bake uncovered for 15-20 minutes or until heated through and serve.
