2 Globe Zucchini plus
1 cup zucchini, diced
1 teaspoon butter
Salt and pepper, to taste
1/8 teaspoon dill weed
1 cup iceberg lettuce shredded, for garnish (optional)
4 long chives
, for garnish (optional)


Cut 1/3 off top of globe zucchini, set tops aside for garnish.

Scoop out pulp into a saucepan leaving a 1/4-inch shell. To the saucepan add butter, the 1 cup diced zucchini, salt, pepper and dill weed. Saute over medium high heat until fork tender, 1 to 2 minutes.

Divide shredded lettuce between two plates; arrange zucchini shells on top the lettuce; spoon contents of saucepan into the shells; lean the reserved tops against the squash, add chives for garnish and serve on a dinner plate next to the main entree.

Wine recommendation: Pinot Gris; Chardonnay
