using French bread, just cut in half, triple the ingredients, fill both
halves and

Garlic Rolls with Spinach and Cheese

a great
idea for lunch... it is kind of like a pizza
Serves 2
2 crusty deli rolls 1 tablespoon butter 2 cloves garlic, minced
2 teaspoons sesame seeds 1/3 cup sour cream 2 tablespoons cheddar cheese, finely grated
1/4 teaspoon salt 1/4 teaspoon pepper 1 teaspoon parsley 1/4 cup frozen spinach thawed, chopped, squeezed dry
1 tablespoon Parmesan cheese, grated Cut 1/2-inch off tops of rolls, set aside for
garnish. Tear out the soft centers
leaving a 1/4-inch shell. In a skillet over medium heat melt the butter and toast the bread chunks, garlic and sesame
seeds together until bread is nicely browned.
In a large bowl combine sour cream, cheddar, salt, pepper, parsley and spinach; add
the toasted bread mixture, mix well and stuff into the hollow deli buns. Sprinkle with
Parmesan, cover loosely with foil and bake on a baking
sheet at 350° for 15 minutes. Remove foil, bake 10 minutes more. Serve by leaning tops next to the
buns and serve with a green
salad.
