Strawberry Soup

Serves 2
1/2 cup fresh strawberries, chopped coarsely
1/2 cup strawberry ice cream 1/4 cup heavy cream, divided 1 teaspoon powdered sugar
1/2 teaspoon fresh lemon juice Chocolate syrup for garnishing champagne glasses 2 Mint Sprigs
In a food processor pulse strawberries, ice cream, 1 tablespoon heavy cream and lemon juice until smooth; transfer to a container with a pouring
spout, cover and chill in refrigerate. Can be made ahead.
Put chocolate syrup in a small deep flat bowl;
dip glass rims in chocolate until syrup runs down sides of glass.
Can be made ahead.
Whip the remaining heavy cream with powdered sugar. Pour
strawberry soup in chocolate rimmed champagne glasses, garnish with whipped cream, a sprig of mint and
serve.
Wine recommendation: a light sparkling wine such as Moscato d'Asti
