Strawberry Mascarpone

Ingredients:
8 ounce container Mascarpone Italian cheese
4 teaspoons Confectioners sugar
Fresh strawberries, washed, trimmed and sliced
4 mint sprigs, for garnish
chocolate syrup, for garnish
4 (1/4-cup) ramekins or moulds
Instruction:
Line ramekins with a large piece of plastic wrap extended slightly over the sides.
Combine the first two ingredients together, spoon into prepared ramekins
pressing into the corners and smoothing the tops, then invert them onto individual
plates; remove the plastic wrap.
Arrange sliced strawberries around the Italian Mascarpone cheese, add a mint sprig,
decorate plates with small dots of chocolate syrup and serve with a
strawberry fan if desired.
