How To Cook Spaghetti Squash In A Microwave Oven


Spaghetti squash is a unique side dish of pasta-like strands resembling spaghetti. When cooked correctly it is slightly crunchy and can be enhanced further with my recipe of butter, garlic and crispy bacon for a delicious side dish to any gourmet dinner menu.

Total Time: 10 min  Prep Time: 10 min  Yield: 1-1/2 cups


1 small spaghetti squash (1-1/2 lb.)
2 slices bacon, diced
1 tablespoon butter
1 small garlic clove, minced
1/4 teaspoon Kosher salt
1/8 teaspoon freshly cracked black peppercorns
1 teaspoon green onion, sliced


Cut spaghetti squash in half lengthwise, place on a microwaveable plate. Microwave on high 5 minutes or more depending on the strength of your microwave until the flesh of the squash is easy to remove. Let the squash rest 5 minutes or until cool enough to handle. Discard seeds. Using a fork, remove flesh from shells (it will come out in spaghetti like strands) into a small bowl.

Fry diced bacon in a skillet until crisp. In a small microwaveable bowl, microwave garlic and butter on high 25 seconds or until butter is melted. Add bacon, reserve 1 teaspoon for garnish. Stir in garlic-butter, salt and pepper to bowl of spaghetti squash and carefully mix together.

Garnish top with reserved bacon and sliced green onion.
