6 ounces cream cheese, softened
1/2 teaspoon dried thyme leaves
cracked black pepper, to taste
12 slices smoked salmon, 2-inch rounds
fresh chives, snipped finely
12 acrylic sticks or popsicle sticks
In a small bowl mix cheese, thyme and pepper together. Place 1 tablespoon mixture in
a small piece of plastic wrap, twist into a ball. Repeat this process with the
remaining ingredients. Put in refrigerator until firm. Unwrap them, cover each with a salmon slice maintaining a round
shape. Dip the top and bottom of balls in snipped chives, see photograph.
Insert a popsicle stick into the base then stick into a halved apple
or eggplant or stand them up in champagne glasses and serve as an appetizer.
