Small Red Potatoes Side Dish
with Truffle Oil

I created this recipe peeling a narrow strip around the center of each potato for a unique presentation with fresh chives.  See more of my easy gourmet Side Dishes. I prepared these for my 7 Course Prime Rib Dinner Menu

Small Red Potatoes

Prep Time: 10 m
in   Total Time: 10 min   Serves 4 to 6


2 pounds small red potatoes, 3 to 5 per person
4 tablespoons butter, melted
1 tablespoon white Truffle oil
1 teaspoon coarse sea salt
freshly cracked black peppercorns to taste
1/4 cup chives
, chopped for garnish


Peel a narrow strip around the middle of each potato for a beautiful presentation. Bring a pan of salted water to boil, insert a steamer basket with potatoes, cover and cook until they are tender, test by poking with the tip of a sharp knife. Drain well, toss with melted butter, salt and pepper. Arrange 3 to 5 per individual plate, drizzle with oil and garnish with chives.

Wine recommendation: Cabernet Sauvignon; Merlot
