Shiitake Mushroom Appetizer

... this is easy
Makes 24 appetizers
12 slices thin white bread, crusts removed and rolled flat butter for greasing muffin tins 4 ounces Shiitake Mushrooms, chopped finely 4 garlic cloves, minced
2 tablespoons butter Salt and pepper, to taste
1/4 pound deli roast beef, thinly sliced, cut into small pieces Brie cheese, rind removed
Parsley for garnish
Cut two 3-inch circles from each bread slice; press neatly into 2 buttered mini muffin tins. Bake at 370° for 7 minutes or until lightly browned.
Can be made 2 days
ahead . In a saucepan over medium high heat sauté mushrooms and garlic in
2 tablespoons butter until liquid has evaporated;
add salt and pepper. Cool the mixture then spoon into tartlets, add roast beef, Brie
cheese and garnish with parsley. Plate Decoration (optional)
Orange slices, halved
Red or black grapes, halved
Arrange fruit around a platter as shown in my photograph.
Wine recommendation: Chardonnay
