Amuse Bouche Chinese Spoon Appetizer

Ingredients:

1 pound salmon fillet, boneless, skinless
1 tablespoon sesame oil
2 green onion, thinly sliced
1 tablespoon freshly grated gingerroot
zest of 1 lime
juice of 1 lime
1 small red chili pepper, finely diced
1/2 teaspoon olive oil
Salt, to taste
Cracked black pepper, to taste
2 teaspoons fresh parsley, chopped

Instruction:

Cut salmon into a small dice, put in bowl with sesame oil, green onion, grated gingerroot, lime zest, lime juice, diced chili pepper, olive oil and parsley. Add salt and pepper according to taste, mix well. Marinate for 30 minutes to develop flavors. Serve on Chinese spoons.


Wine recommendation: Pinot Gris; Chardonnay
