the first time I tasted this was years ago at one of our church potlucks, our whole family loved it and it has been a favorite ever since

Ozark Pudding
recipe and photograph by www.finedinings.com

Serves 4

2 tablespoons flour
1-1/4 teaspoons baking powder
1/8 teasp. salt
3/4 cup sugar plus 1 teaspoon, divided
1 egg
1-1/2 teaspoons vanilla, divided
1 medium apple, peeled, finely chopped
1/2 cup walnuts or pecans, toasted, chopped
1/2 cup heavy cream
Fresh mint sprigs

Sift together dry ingredients.  In a mixing bowl beat 3/4 cup sugar, egg and 1 teaspoon vanilla until smooth; add the dry ingredients blending well. Fold in apples and nuts; pour into a greased 9-inch pie pan. Bake at 350° for 30 minutes. Dessert will rise then fall, don't be alarmed, it is normal.

Combine cream with the remaining 1 teaspoon sugar and 1/2 teaspoon vanilla; whip to soft peaks.  Spoon Ozark Pudding into a martini glass or on dessert plates; top with whipped cream; garnish with a mint sprig and serve warm or cold.

Wine recommendation: Riesling
