one Onion Sour Cream Tartlet

Makes 12 Appetizers
6 slices thin white bread, crusts removed, rolled flat
2 cups yellow onion, thinly sliced 2 tablespoons butter
2 tablespoons water Salt and pepper, to taste 2 teaspoon dried thyme 1/4 cup sour cream
3 tablespoons snipped chives
Cut two 3-inch circles from each
bread slice; press neatly into a greased mini muffin tin. Bake at 370°
for 7 minutes or until lightly brown. Can be made 2 days ahead, covered at room temperature.
In a skillet over medium heat sauté onions in butter and water
stirring constantly until caramelized. Remove from heat, add salt, pepper
and dried thyme.
In a small bowl mix together sour cream, chives,
salt and pepper; spoon into tartlets, top with caramelized onions and serve.
Wine recommendation: Pinot Gris
