2 pounds baby new white potatoes, scrubbed clean
4 tablespoons butter, melted
1 tablespoon white Truffle oil
1 teaspoon coarse sea salt
freshly cracked black peppercorns to taste
1/4 cup fresh chives, chopped
In a saucepan, place a steamer basket with potatoes and add water to a depth of
1 to 2 inches. Be sure the water does not touch the bottom of the
basket. Cover and bring to a boil over medium high heat. Steam them until the tip of a sharp knife can be easily inserted.
Remove from heat and drain well. Add butter, oil, salt and pepper tossing gently.
Divide among 6 plates, sprinkle with chives and serve.
