Mini Pizza Appetizer Recipe
with Cheese and Pepperoni

I have had this recipe for years, I like to make it with turkey pepperoni because the oil content is lower than beef.  Be sure to use Thyme, the aromas coming from the oven are wonderful.

Mini Pizza

Prep Time: 10 min    Total Time:10 min    Yield: 12-inch 

Ingredients:

12-inch Boboli thin Pizza crust
1 tablespoon extra-virgin olive oil
1/2 pound Fontina cheese, grated
1/2 package sliced Turkey Pepperoni chopped finely
1 cup leeks or white onions, thinly sliced
1-1/2 cups Roma tomatoes, finely chopped
2 teaspoons dried thyme
Salt and pepper, to taste

Instruction:

Preheat oven to 450 degrees F.

Spread Boboli with oil to produce a crisp crust. Place on a baking sheet or pizza pan and layer with cheese,  pepperoni, leeks or onion slices, tomatoes, thyme, salt and pepper.

Position oven rack on the bottom setting and bake for 15 minutes. Remove from oven and let rest for 5 minutes before cutting into mini pieces or any shape you like, then serve.

Wine recommendation: Merlot; Beer
