Mango Ice Cream Dessert Rose

Serves 2
2 pieces plastic wrap, 12-inch x 12-inch
2 martini glasses 2 fresh Mango, peeled, thinly sliced
1 pint vanilla ice cream Mint sprigs, garnish
Fit plastic inside martini glasses draping
excess over the sides; fill with ice cream pressing in firmly; smooth the tops, fold plastic over the
ice cream and freeze. This can be made 2 days
ahead. Place serving plates in freezer.
When ready to serve, invert ice cream
onto chilled serving plates and remove plastic.
Cut a small slice off one end of mango slices to fit squarely on the plate. Place the slices around the
cone shaped ice cream overlapping them
slightly making a mango rose; garnish with mint sprigs and serve.
