Prep Time:10 min
Total Time: 10 min
Yield: 1-1/4 cups

Ingredients:

1/2 cup sugar
1/2 cup water
Zest from 1 lemon
1/2 cup fresh lemon juice
2 tablespoons fresh Thyme herb, chopped
herb leaves and/or sprigs for garnish

Instruction:

Combine sugar and water in a small saucepan, bring to a boil. Add the zest, lemon juice and thyme. Cover and simmer for 10 minutes. Set aside to cool. Strain the mixture then transfer to a shallow container, cover and freeze until firm.

Remove from freezer, puree in a blender or mini food processor until smooth. Put into a small bowl, cover and freeze again.

When ready to serve use a melon baller to make 1 to 3 small round balls per person. Place in a stemmed glass, add the garnish and serve.
