Easy Valentine's Day

Serves 2

Vanilla Ice Cream
(or use a commercial brand)
1/2 cup heavy whipping cream
2 tablespoons sugar
1 large egg yolk
1/4 teaspoon vanilla extract

Bring cream and sugar to a boil in a saucepan over medium high heat. In a small bowl whisk egg yolk with a small amount of hot cream mixture, add back to hot cream whisking rapidly to thicken, do not let it boil; remove from heat and cool. Set aside 2 teaspoons for garnish. Line heart shaped cookie cutters with plastic wrap; spoon in ice cream mixture pressing firmly; smooth tops, cover and freeze. They can be made two days ahead.

Chocolate Ganache
(or use commercial chocolate syrup)
1/2 cup heavy cream
2 tablespoons dark corn syrup
6 ounces bittersweet or semisweet chocolate, chopped
squirt bottle (I use a clean plastic catsup or mustard container)

In a small saucepan, bring cream and corn syrup to a simmer; remove from heat; add chocolate whisking until melted and smooth. Cool; pour into squirt bottle and refrigerate; soften in microwave before using. Can be made 2 weeks ahead of time.


Strawberry Coulis
2 - 3 Strawberries, stems removed
1/2 teaspoon Cornstarch

Push strawberries through a fine mesh.  Microwave in small bowl with cornstarch 1 minute stirring to thicken; pour into a squeeze bottle and refrigerate. When ready to use soften in microwave a few seconds. Can be made 2 days ahead.

Assemble dessert

Place heart shaped ice cream on serving plate, remove plastic; decorate top with strawberry coulis; make small puddles of chocolate ganache around the heart; put small dots of the reserved vanilla ice cream on the chocolate puddles; use a toothpick or tip of a sharp knife to draw a line through the sauces making hearts. Add the strawberry fan garnish, a sprig of mint and serve your guests a Valentine's Day gourmet dessert.
