Ice Cream Strawberry Timbale
recipe and photograph by Peggy Bucholz, www.finedinings.com

Recipe Type: ice cream, dessert, timbale, strawberries, fruit

Prep Time: 10 min
Total Time: 10 min
Serves: 8

Ingredients:

8 (4 ounce) plastic or paper cup
4 cups Vanilla Ice Cream

4 cups fresh strawberries, preferably with pointed ends
freshly cracked black pepper
8 fresh mint sprigs

Instruction:

Spoon ice cream into cups pressing in firmly; smooth the tops, cover and freeze. Can be made two days ahead.

Cut tops off strawberries; slice vertically; arrange on the plate pointed ends toward the outside, (see my photograph) overlapping in a semi-circle until you have two or three rows.

Cut or peel paper from ice cream cup, invert onto plate setting in the semi-circle; garnish plate with black pepper, mint sprigs and serve.... how easy is that!
