Cucumber
Radish Cream Cheese Appetizer Recipe

Makes 12 Appetizers
4 ounces Cream Cheese, softened
2 tablespoons fresh mint, thinly sliced 1/4 teaspoon fresh lemon juice
1/8 teaspoon salt pinch of cayenne pepper, or to taste 3 teaspoons fresh chives, snipped, divided
1 teaspoon fresh lemon zest, divided English cucumber, trimmed, sliced 1/8-inch thick
3 small radishes, trimmed, sliced 1/8-inch thick French sea salt for sprinkling
In a small bowl combine cream cheese, mint, lemon juice, salt and
cayenne. Add chives and lemon zest reserving 1
teaspoon of each for garnish.
Put a tiny dab of cream cheese mixture on each cucumber slice to
hold radish slices in place; put radish slice on cucumber slice; add 1/2 teaspoon cream
cheese mixture, garnish with reserved chives and zest. Place appetizers on a platter,
sprinkle with sea salt and serve.
