Recipe Type: soup, chilled soup, green pea, mint

Prep Time: 15 min
Cook Time: 15 min

Yield: 1 cup

Ingredients:

2 tablespoons butter
1 scallion, chopped
2 tablespoons celery, chopped
1/2 small garlic clove, minced
1/3 cup petite green peas, frozen
1/2 cups chicken stock or broth
6 tablespoons fresh mint leaves chopped plus 2 sprigs for garnish
1/4 cup heavy cream
salt to taste

Instruction:

Melt butter in saucepan over medium heat, add scallion, celery and garlic; sauté for 2 minutes; add green peas, chicken stock and mint leaves. Bring to a boil then turn heat down to a simmer for 4 to 6 minutes.

Transfer the green pea mixture to a food processor; puree then strain. Pour into a container with a pouring spout, add heavy cream and salt to taste, cover and chill in refrigerator.

When ready to serve pour into martini glasses and garnish.
