Garlic Mashed Potatoes

Serves: 6

Ingredients:

2 pounds Russet Potatoes, peeled
6 whole garlic cloves, peeled
3 tablespoons butter
1/2 to 3/4 cup cream, milk or half&half, heated
Parsley for
garnish

Instruction:

Boil potatoes and garlic together until tender; drain and mash with a small amount of heated cream until smooth. Serve on individual plates with an herb encrusted chip, if desired.



Herb Encrusted Chip
(stained glass potato chip)
Russet Potato, unpeeled, thinly sliced
Fresh Italian Parsley leaves
1/4 teaspoon butter

Put a parsley leaf between two potato slices, smooth over with your finger removing any air pockets. Melt butter in a skillet over medium heat, sauté slices until golden.
