Pea
Pod and Carrot Garnish

pea pods, strings removed, ends trimmed
carrots, peeled, sliced 1/4-inch into coins
Boil vegetables in separate pots until tender crisp, drain, plunge into ice water, drain
again. Can all
be prepared 1 day ahead.
Serve 5 pods with 3 coins (slices)
per plate.
