Cucumber Cups Filled with Crab green onions, celery, lime juice, olive oil and herbs

Ingredients:
1 English cucumber, unpeeled
1/4 cup crabmeat
1 teaspoon lime zest
1 teaspoon lime Juice
1 tablespoon green onion, sliced fine
1/4 cup celery, diced fine
1 tablespoon extra-virgin olive oil
Salt and Pepper, to taste
Fresh herbs (basil or thyme or rosemary or parsley) for
garnish
Instruction:
Wash cucumber, cut crosswise diagonally into 1-1/2-inch slices (see my photograph).
Scoop out centers with a melon baller leaving 1/4-inch walls and salt them lightly;
turn upside down to drain on paper towels.
Mix together in a bowl crabmeat, lime zest, lime juice, green onion, celery,
olive oil, salt and pepper. Fill
with the mixture. Garnish with herbs of your choice and serve.
