Cucumber Goat Cheese Mousse Boats uniquely cut cucumber slices to resemble boats

Ingredients:
1 English cucumber
3 ounces goat cheese
2-1/2 tablespoons heavy cream
1/2 teaspoon dried thyme
1-1/2 teaspoons fresh parsley, chopped fine
salt and pepper to taste
a shake of garlic powder
chives, snipped
Instruction:
Score cucumber skin lengthwise with tines of a fork;
cut crosswise into 3/4-inch-thick slices. Stand slices on cut sides, cut them in half, then stand them on their peel sides making little
rocking boats (see my photograph); sprinkle lightly with salt, blot on a paper towel and set
aside.
In a small bowl mix goat cheese, cream, thyme, parsley, salt, pepper and garlic
powder together making a mousse. Spoon on to cucumber slices or use a piping bag; top with fresh chives
and serve.
