Cucumber Goat Cheese Mousse Boats Appetizer

Recipe Type: appetizer, cucumber, cheese, cream

Ingredients:

1 English cucumber
3 ounces goat cheese
2-1/2 tablespoons heavy cream
1/2 teaspoon dried thyme
1-1/2 teaspoons fresh parsley, chopped fine
salt and pepper to taste
a shake of garlic powder
chives, snipped

Instruction:

Score cucumber skin lengthwise with tines of a fork; cut crosswise into 3/4-inch-thick slices. Stand slices on cut sides, cut these in half making little rocking boats (see my photograph); sprinkle lightly with salt, blot on a paper towel and set aside.

In a small bowl mix goat cheese, heavy cream, thyme, parsley, salt, pepper and garlic powder together. Spoon on to slices or use a piping bag; top with fresh chives and serve.



Wine recommendation: Pinot Noir; Chardonnay; Beer
