Rice Pilaf

make in a microwave oven
... add cream cheese for a smooth texture
Serves 2
1/2 cup packaged white and wild rice with spices
1-1/3 cups chicken broth 1 tablespoon butter 1/4 cup onion, finely chopped 1/3 cup celery, finely chopped
1/4 cups red bell pepper, diced fine 4 teaspoons cream cheese 1/4 cups
Arugula, sliced 1/4-inch thick
Fresh Basil leaves for garnish
Combine rice and chicken broth in a glass
casserole, cover and microwave 12 minutes. Add butter, onion, celery and bell pepper (reserve 1 teaspoon for
garnish). Microwave 2 minutes more. Remove from microwave
oven, fold in cream cheese and Arugula.
Press into two small
4 ounce custard cups,
invert onto serving plates; garnish with basil leaves and the reserved red bell
pepper and serve.
