Rice Pilaf Recipe

Serves 2
1/2 cups packaged white and wild rice with spices
1-1/3 cups chicken broth 1 tablespoon butter 1/4 cup onion, finely chopped 1/3 cup celery, finely chopped
1/4 cup red bell pepper, diced fine 4 teaspoons cream cheese 1/4 cup Arugula, sliced thinly
Fresh Basil leaves for garnish
In a non-metal glass container combine rice and
broth, cover and microwave 12 minutes. Add butter, onion, celery and bell pepper (reserve 1 teaspoon for
garnish). Microwave for an additional 2 minutes. Remove from microwave
oven, fold in cream cheese and sliced Arugula.
Press the creamy rice pilaf into two small ramekins,
invert onto serving plates; garnish with reserved red bell pepper, basil leaves and serve.
Wine recommendation: Chardonnay
