Servings: 2

Ingredients:

1/2 cup packaged white rice and wild rice with spices
1-1/3 cups chicken broth
1 tablespoon butter
1/4 cup onion, finely chopped
1/3 cup celery, finely chopped
1/4 cups red bell pepper, finely diced
4 teaspoons cream cheese, room temperature
1/4 cups Arugula, sliced 1/4-inch thick
Fresh Basil leaves for garnish
2 (4 oz.) custard cups

Instruction:

Combine rice and chicken broth in a glass casserole, cover and microwave 10 minutes or until rice is cooked. Add butter, onion, celery and bell pepper (reserve 1 teaspoon peppers for garnish) and microwave an additional 2 minutes more. Remove from microwave oven, fold in cream cheese and Arugula to make a creamy texture.

Press the creamy rice mixture into custard cups for a nice presentation then invert them onto serving plates; garnish with basil leaves, the reserved red bell pepper and serve.

Wine recommendation: Pinot Gris; Chardonnay; Sauvignon Blanc
