The first time I had this was at an outdoor barbecue picnic,
it was a
big hit for both kids and adults.... who doesn't like
chocolate? peanut butter? a cookie? pizza?
I thought this was a unique combination of foods, a great idea
especially with a roasted peanut taste... I had to
make it myself.
It travels well to 'bake and take' to
share with others at potlucks, family gatherings, etc.
It is simple to make,
even kids can do it, it is a great home economics project for them.
I remember one time I
made this chocolate peanut cookie delight for a church youth group.
While the Pastor was still
speaking,
I happened to go into the kitchen and saw two teenagers with chocolate on their
hands and face getting
an early start on it... haha..
that was a great compliment. It's a keeper!

Peanut Butter Cookie Pizza

1/2 cup white sugar 1/2 cup brown sugar, firmly packed 3/4 cup butter, softened 1 egg
1/2 teaspoon vanilla 1 cup all purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 12 ounce package
semi-sweet chocolate chips, divided 1/2 cups smooth style peanut butter 1 cup Heath candy bars, coarsely chopped
In a mixing bowl beat white and brown sugar with softened butter until light and fluffy. Add
the egg and vanilla mixing well. Combine flour,
salt and baking soda; add to the cookie batter mixing on low speed until well blended.
Add one-half package of chocolate chips.
Spread
cookie batter onto a 14-inch pizza pan to within 1/2-inch of edges (batter will spread). Bake at
350° for 15 to 20 minutes or until lightly brown. Remove from
oven and immediately drop spoonfuls of peanut butter over the top
and sprinkle with the remaining package of chocolate chips. Wait 5 minutes
to soften then spread evenly with an offset spatula over the pizza. Sprinkle with chopped Heath candy bars; slice into
wedges and serve.
Wine Suggestion: Merlot; Zinfandel
