Ingredients

Boston, Bibb, Butter or Iceberg or Romaine lettuce leaves, whole, drained
1 pound chicken breast
2 tablespoons butter
1 large onion, chopped
2 tablespoons garlic, minced
1 tablespoon soy sauce
1/4 cup Hoisin sauce
2 teaspoons fresh ginger minced
1 tablespoon rice wine vinegar
2 teaspoons Asian chili pepper sauce
8 ounce can sliced water chestnuts, drained, finely chopped
2 teaspoons Asian sesame oil
1 bunch scallions, thinly sliced
1/3 cup fresh dry roasted peanuts, roughly chopped


Directions

Melt butter in a skillet and saute chicken over medium heat until completely cooked and juices are clear. Remove chicken to a cutting board, finely chop and place in a small bowl.

Add onion and garlic to the skillet, cook until softened; put in the bowl with the cooked chopped chicken. Add the soy sauce, hoisin sauce, fresh ginger, rice wine vinegar, Asian chili pepper sauce, water chestnuts and sesame oil blending well.

To serve, arrange lettuce leaves on one side of a large platter, spoon the chicken mixture onto the other side of the platter. Put sliced scallions and dry roasted peanuts in separate bowls. Allow guests to make their own wraps by taking a whole lettuce leaf then spooning on the chicken filling, adding scallions and peanuts if desired, then rolling up the lettuce leaf like a taco and enjoy eating a delicious gourmet lunch. Don't forget to include lots of napkins!!

Note:  For those who like even spicier wraps, be sure to put the Asian chili pepper sauce bottle on the table for their use.

Wine recommendation: Cabernet Sauvignon; Pinot Gris; Beer; Chardonnay
