Cherry Tomato Appetizer

Stuffed Cherry Tomatoes

Prep Time: 30 min      Total Time: 30 min      Yield: 32


Ingredients:

32 Cherry Tomatoes
Salt and pepper, to taste
4 ounces Mozzarella Cheese
2 tablespoons extra-virgin olive oil
1/4 cup Fresh Basil leaves sliced 1/4-inch

Instruction:

Cut and discard a small slice from the bottom of each tomato so they will sit level. Cut and discard a small slice off the tops.  Scoop out centers with the small end of a melon baller. Sprinkle insides with salt and pepper, place upside down on paper towels to drain.

Stuff with a small amount of cheese, drizzle with oil and top with basil. Serve on a platter,
garnish with whole basil leaves.
