Cheeseball Truffle Appetizer

3 ounce package cream cheese, room temperature
4 ounces finely shredded Sharp Cheddar cheese
3 tablespoons finely ground pecans, divided 1 teaspoon grated onion
1 teaspoon minced garlic 1 teaspoon dried thyme Fresh Parsley for
garnish
In a small mixing bowl combine the two cheeses, 2 tablespoons ground
pecans, grated onion, minced garlic and dried thyme. Cover and refrigerate
until firm.

Using the palms of your hands roll the cheese
mixture into balls approximately the size of a walnut. Coat each
cheeseball in
the remaining 1 tablespoon finely ground pecans until they are well
covered with the nuts. Place on a serving dish garnished with
fresh parsley and serve.
